I'm just sitting here, waiting for my roommate to arrive from Seattle. I have given up on the ideas of the muddy frogwater festival in milton freewater and making delicious salsa verde. Last night I fainted after a combination of 1 beer, too much sugar, and lots of stress. Thankfully Prawin and Tuan were there to catch me. Now for my quick rant about sugar substitutes. One day while checking the science section of the L.A. Times, I came across an article about sugar substitutes. The articles contained several facts which disturbed me. First of all, much like the first polymers, most of the delicious discoveries were made accidentally after lab experiments. What were so many people doing licking their fingers after working in a lab? One person even ate his experiment after misinterpreting "test it" as "taste it." All I have to say is, these people are lucky to be alive. Second, I came to the realization that, as much fun as it sounds, I do not want to work in food science. I am trying to remain idealistic for as long as possible and do not want to spend my time making it easier for people to be gluttonous. How much time, energy, and money is spent on finding the perfect calorie-free sugar? The simple solution to our problems: EAT LESS SUGAR. I say this as I continue to mourn the loss of my precious chocolate bar. Chau is home! Oh, and hi to Lillian who commented less than 5 minutes after my last post. Posted by Picasa
